Chinese Food in Singapore - Hokkien
| Hokkien food is simple and hearty, with simmered soups and meats that are either braised, fried or stir-fried. Popular dishes include sliced, braised pork belly in a steamed bun (kong bak pau), thick yellow noodles braised in a dark sauce and stock (Hokkien mee), deep fried prawn roll (hae cho), minced pork, prawn and chestnut roll in a beancurd skin (ngoh hiang), oyster omelettes and pig's trotter bee hoon (rice vermicelli).

Chinese Food in Singapore - Hainanese
| A cuisine characterised by simple cooking and strong flavours, the food is typically either boiled or blanched. Popular dishes include steamed white chicken with chicken rice (bai zhan ji), Hainanese pork chops in a tomato gravy, a rice flour kueh filled with coconut, sesame seeds and peanuts (yi bua), rice flour kueh doused in coconut and sesame seeds cooked in brown sugar (art bua).

| Cantonese food is rich and robust, the soups are tasty and the 'wok hei' dishes bear the charred aroma of wok-frying on very high heat. High heat frying, steaming and double-boiled soups are Cantonese cuisine and the popular foods include roast duck, char siew, steamed fish with soya sauce, braised sea cucumber and Chinese mushrooms, braised spare ribs, watercress soup with pork ribs and red dates, winter melon soup, century egg and lean pork porridge.

| Teochew food is known for its fresh flavours and fragrant, light and tasty sauces. Steaming is the preferred method of cooking; followed by stir-frying and braising. Well known Teochew dishes include steamed fish with preserved vegetables, tomato, sour plum and ginger braised goose/duck in a soya sauce gravy, yam paste dessert and Teochew porridge (often eaten with preserved oives, preserved lettuce and salted egg).
